Strawberry Rhubarb
A perfect compliment to a picnic with the nostalgic flavors of homemade Strawberry Rhubarb pie! Just in time for strawberry season, this co-fermentation of apples, strawberries, and rhubarb gives Strawberry Rhubarb a ruby red glow with notes of strawberry jam, lemon curd, and green apple.

- METHOD: We settled solids in the juice by dosing pectic enzyme and killing off ambient yeast with the addition of sulfites. We chaptalized the apple must with Strawberry and Rhubarb juice before fermenting it with our house white wine yeast culture (Tropica) at 58 degrees for 7-10 days.After fermentation progressed to the desired level of residual sugar (6 Brix) we arrested the fermentation by cold crashing the tank at 32 degrees for 7 days. We then racked the cider off its fermentation lees.
